What makes Kuni’s different than other area eateries?
As far as sushi goes, I make traditional style sushi like what you would have in Japan. I don't use American-style ingredients such as cream cheese or mayonnaise.
Can you describe your philosophy toward food and cooking?
Simplicity! For the last few decades, so many exotic foods, seasonings herbs and spices became available in Buffalo Niagara from all over the world, but I try to use less ingredients and seasonings in order to simplify the taste when I make up a dish. If you have a salmon dish at my restaurant, you actually taste the salmon, not the spices or seasonings. I always think, what can I do to make this dish simpler?

Chicken fingers! I can’t live without them; they are so delicious!
